From Loch Fyne's Signature range, this Scottish salmon is dry cured for 24 hours and smoked with oak chips for 12-15 hours at ambient temperature to give a delicate flavour and buttery texture that melts in the mouth. This smoked salmon offers deep red coloured long slices of salmon cut along the length of the fillet and ready to serve. Long sliced is a more modern technique used to slice salmon. It involves slicing the fish lengthways, from head to tail. The brown meat has been fully removed. This smoked salmon is ideal to use either as part of a sharing starter (serving 11 x 60g portions) or as an ingredient for making terrines, smoked salmon parcels filled with cream cheese or sandwichs.

All of Loch Fyne's salmon comes from Global GAP approved fisheries, either in Loch Fyne or in other pristine West Coast lochs. Loch Fyne smoked salmon is kosher approved by the Manchester Beth Din.

Loch Fyne Oysters Ltd. was established in 1978 by local landowner Johnny Noble and his friend, marine biologist Andy Lane. The company started with the inspirational idea of growing oysters in the clean, fertile waters at the head of Loch Fyne – the longest sea loch in Scotland - providing both employment for locals and income to support the estate at Ardkinglas.

Using their combined knowledge and enthusiasm, they laid the foundations for the company to become one of Scotland’s foremost producers of premium seafood and the home of our internationally acclaimed restaurant – proud to have served celebrities, film stars, Prime Ministers and even Royalty. Today, Loch Fyne has evolved to include not only the original oyster farm, restaurant and deli but also an award winning smokehouse, mussel farm and oyster hatchery.

Loch Fyne are passionate about delivering quality and flavour, making where they source their produce the key.  They make sure that every oyster harvested, every salmon prepared and every fish leaving  their shops and kitchens is cultivated, farmed or fished in accordance with their strict environmental and quality guidelines, taking advice from respected marine bodies. Where species are not plentiful they find alternatives and do not source fish caught by methods deemed to be harmful to the marine ecosystem such as deep-sea trawlers, beam trawlers or industrial long-liners.
