This kiln roasted salmon is dry cured for 9 hours at ambient temperature and kiln roasted for 3 hours. This produces smoked salmon with a full flavour and flaky texture and offers a dark coloured unsliced fully trimmed hot smoked salmon fillet. Bradan Rost is Gaelic for roasted salmon, appealing as much to the eye as to the palate; pink in colour with a rich, golden brown roasted finish. A real crowd pleaser, the Bradan Rost is ideal to serve as a centre piece on your dinner table, with left overs used in a risotto, pasta sauce, mixed with cream cheese for a pate or flaked in a salad.
All of Loch Fyne's salmon comes from Global GAP approved fisheries, either in Loch Fyne or in other pristine West Coast lochs. Loch Fyne smoked salmon is kosher approved by the Manchester Beth Din.
Loch Fyne Oysters Ltd. was established in 1978 by local landowner Johnny Noble and his friend, marine biologist Andy Lane. Loch Fyne are passionate about delivering quality and flavour, making where they source their produce the key. They make sure that every oyster harvested, every salmon prepared and every fish leaving their shops and kitchens is cultivated, farmed or fished in accordance with their strict environmental and quality guidelines, taking advice from respected marine bodies. Where species are not plentiful they find alternatives and do not source fish caught by methods deemed to be harmful to the marine ecosystem such as deep-sea trawlers, beam trawlers or industrial long-liners.
