The parcels 'Echezeaux du Dessus' and 'Les Quartiers de Nuits' make up our Echezeaux Grand Cru. The soil is clay and limestone and to preserve their quality, the grapes are harvested by hand and sorted manually. Before the alcoholic fermentation, there is a cold pre-fermentation maceration which lasts between 4 to 6 days which helps to extract the phelonic compounds and the Pinot Noir grapes are partially destemmed. The maceration then lasts 15 days during which pigeages without reassembly are performed. Their number and intensity are the variables leading to the concentration of tannins, their fragrance and colour.
The alcoholic fermentation is carried out with indigenous yeasts. After maceration, presssed wine and dropped wine are carefully separated and aged in traditional 228 litre Burgundy barrels for 18 months with 100% new oak. We only use oak barrels of French origin from Burgundy, Allier, and Vosges. The wine offers a beautiful purple haze with garnet and dark ruby tones. There are notes of black fruits, spicyness and chocolate. In the mouth, the wine is powerful, the tannins are melted, with very nice final length. Ideal with fresh salmon and chestnuts.
