Taste Tradition's rare and traditional breed cattle are reared using old-fashioned methods which allow the flavour to grow into the meat. These breeds carry additional fat which helps to infuse moisture and offer a distinctive flavour into the meat whilst it cooks.
This joint is cut from the forequarter, specifically the forerib. It is very well suited to roasting or being cut into steaks before being cooked.
