Using a thirty year old recipe, Coln Valley's finest Scottish salmon is naturally smoked in traditional London brick kilns using the highest quality oak chippings. This process takes about 5 days from smoke to pack, giving a delicious smoked salmon flavouring that is unique to Coln Valley. This Scottish salmon is then delicately sliced and is ready to serve.
D-cut is a slicing technique that gives the salmon slice a 'D' shape. It involves slicing the fish from back to belly. This includes the salmon’s rich, flavoursome brown meat. Each slice is then carefully layered on top of each other, in order to recreate the look of the original, uncut side. The D-cut side is the perfect way to buy smoked salmon if you’re entertaining.
