Cuvée Palatia is an exceptional wine from an exceptional vineyard. Santorini is hot dry and windy – a volcanic Greek island in the middle of the Aegean Sea, and yet it produces wines with so many fresh, vibrant, mineral characteristics. Vines here are older than anywhere. Some are 200 years old and they are all ungrafted. There is no phylloxera on Santorini.

Cuvée Palatia is made from 100% Assyrtiko. The wine is fermented and aged on the lees in stainless steel tanks. The combination of soil type and grape variety gives a wine with incredible freshness and energy, there are fresh citrus as well as more ripe tropical fruit notes to find. But as well as this freshness, the hot climate brings a wine with richness, weight and texture and strong mineral and salty saline character too. The length of flavour is impressive and the wine has a great power and concentration.

The wine pairs well with shellfish and strong flavoured fish and white meat. It also works very well with hard mature cheeses.
