Aiyama, the ‘Diamond of Sake Rice’ is a rare strain that originated from the crossbreeding of the highest quality sake rice “Yamada-Nishiki” from the Hyogo Prefecture. With limited supply it is highly sought after. Daiginjo reveals its quality at 35% polished ratio enhancing the richness and overall flavours.

Tasting Notes:

Rich in flavour there is a pleasant aroma with a clean sweetness. Refreshing in the mouth with a slight lingering acidity.
