Scottish salmon, dry cured for 18 hours, smoked with oak shavings for 12-15 hours at ambient temperature to give a delicate flavour.
All of Loch Fyne's salmon comes from Global GAP approved fisheries, either in Loch Fyne or in other pristine West Coast lochs. Loch Fyne smoked salmon is kosher approved by the Manchester Beth Din.
This salmon fillet is best served cut in medallions to appreciate its delicate taste and smooth texture. Bring to room temperature before serving and season to taste with black pepper and fresh lemon juice.
Loch Fyne Oysters Ltd. was established in 1978 by local landowner Johnny Noble and his friend, marine biologist Andy Lane. The company started with the inspirational idea of growing oysters in the clean, fertile waters at the head of Loch Fyne – the longest sea loch in Scotland - providing both employment for locals and income to support the estate at Ardkinglas.

Loch Fyne are passionate about delivering quality and flavour, making where they source their produce the key. They make sure that every oyster harvested, every salmon prepared and every fish leaving their shops and kitchens is cultivated, farmed or fished in accordance with their strict environmental and quality guidelines, taking advice from respected marine bodies. Where species are not plentiful they find alternatives and do not source fish caught by methods deemed to be harmful to the marine ecosystem such as deep-sea trawlers, beam trawlers or industrial long-liners.
