Opaline AOP Coteaux Varois en Provence vineyard is located on a clay-limestone Triassic plateau in central Var. It enjoys a mediterranean climate and at maturity, the significant amplitude between the daytime and nighttime temperatures is particularly favourable to the development of the aromatic potential of the grapes. The vinification of the different grape varieties is done separately, Syrah is vinified by direct pressing, Grenache and Cinsault undergo a slight pre-fermentation maceration. The juices are decanted, alcoholic fermentation occurs between 17 and 18°C and there's an early bottling. The rosé is very clear with a salmon pink hue and has a refreshing nose dominated by strawberry and citrus notes. The palate offers a balance of peach, grapefruit and berries, the finish is long and fresh, ideal accompaniment with seafood and salads.
