An AOC cheese made with pasteurised sheep's milk from the Basque region of South West France. The name Ossau Iraty, a combination of two place names, dates from 1980 when the AOC was established.
This cheese does however, have ancient origins and was traditionally made by shepherds in mountain huts.
Ossau Iraty is the colour of pale butter with a smooth texture and mild flavour. As the cheese develops it becomes nuttier with more apparent sharp, slightly salty flavours. Eaten traditionally in the Basque region with cherry preserves, it is wonderful with berries and dried fruits and enjoyed with a glass of cold dry/medium white wine or cider.
