Only cheese made with milk from sheep grazing on the plains of La Mancha can carry the name Manchego. Manchego Cheese is abundantly nutty and briny, with delicate hints of fruit, caramel and a sweet lanolin aroma. The texture is crumbly and hard, while the body of the cheese displays some small holes with tiny white crystals throughout.
This Spanish cheese is great with dry sherry or red wine and is a fantastic accompaniment to crusty bread as part of an antipasto. Alternatively, it can be eaten as a dessert with fruit.
