Taleggio takes its name from the valley where it originated in the 10th-11th Century. A soft, creamy cheese from Lombardy in Italy, this cheese has a mild, buttery flavour and a smooth, melt in the mouth texture. Taleggio cheese is hand salted and matured high in the mountains of Valteleggio, where it is ripened for a minimum of 50 days.
Taleggio cheese makes a good accompaniment to crusty bread and fruit, and is perfect with cold white wine. Alternatively, it can also be sliced and used in cooking.
