Raclette is a French cow's milk cheese famous for being eaten hot as it melts to perfection. Its name comes from the French word `Racler' which means `to scrape'. It has a firm consistency when cold with a sweet, slightly mushroom aroma and a full, milky flavour. Perfect when sliced and melted and eaten traditionally with potatoes and pickles.
Enjoy with a glass of light, dry white wine such as Sauvignon Blanc or a light fruity red such as a Pinot Noir. Raclette is also enjoyed with a light beer, sparkling water with fresh lemon juice or a cup of green tea.
