In their quest to celebrate traditional cheese making techniques, Ford Farm have revived the ancient art of maturing cheese in caves, a practice that dates back as far as the 16th century.
Made from a dedicated milk supply taken from the local area surrounding their Dorset farm, Ford Farm's delicious West Country Farmhouse Cheddar is wrapped in cotton cloth and matured for at least 9 months before being transported to the depths of the caves at Wookey Hole. Aged for a further 3 months, this cheese shows mild to mature flavour and farmhouse character.
