An English territorial cheese with a moist crumbly texture, a yoghurty, buttery flavour, back notes of lemon and grass and a lactic finish. An unpasteurised cow's milk cheese made to the traditional way using 2 day milk, cloth binding and buttering by Graham Kirkham using the exact method his great grandmother used.
Enjoy this cheese traditionally as part of a Ploughman's lunch with pickles and crusty bread and a glass of cold beer or ale.
