Gruyére is an AOC hard, Swiss cheese made with unpasteurised cow's milk. It is sweet, nutty and earthy with a grainy texture. It is associated with baking and melts to perfection.
This cheese is incredibly versatile and can be used as the main ingredient for a fondue, in soups, quiches, sauces and omelettes or eaten alongside pears, apples, dates, figs, cashews or walnuts.
Accompany this rich cheese with a fruity wine such as a Riesling, Chenin Blanc or Pinot Grigio or try with a sweet sherry or sparkling apple cider.
