Cashel Blue is a rich, creamy soft blue cheese and, as its blue flavour isn't overpowering, it's a wonderful introduction to blue cheese. Hand made on the farm in Tipperary, Ireland by Jane and Louis Grubb with pasteurised milk from their own herd of pedigree Friesians. The cheese is sold young whilst firm and crumbly but with age comes a softer texture and a fuller blue, yet milky flavour.
Eaten at room temperature it works well with red onion marmalade, rhubarb chutney, quince jam, figs, dried fruit, fruit bread and oatcakes. Enjoy with a dessert wine such as a Sauternes, a new world sweet wine, an aged tawny port, whisky, a cold glass of beer or a crisp pear juice.
