One of Switzerland's best exports, Tete de Moine is a semi-hard cow's milk cheese which has a spicy, fruity taste and an earthy aroma. Tete de Moine, meaning 'Monks Head', was invented by the monks of the abbey of Bellelay more than 8 centuries ago. It makes a great accompaniment to toasted bread, red wine and strong ale.
The Girolle was invented in 1982 as a way of scraping, primarily Tete De Moine cheese.
It is made up of a wooden base and a metal rod in the centre, so when the cheese is placed on the board and the handle turned, beautiful rosettes are created which resemble chanterelle mushrooms, known as `girolle' in French.
Storage: Minimum shelf life of 14 days. Tete de Moine cheese may be frozen with care, although flavour and texture are likely to be affected.
